In the meantime, the Cheese Maker team would like to offer you, the reader, a crash course in fresh cheeses, from Mozzarella to Feta!
First and foremost, what evenis fresh cheese? Fresh cheese is simply cheese that has not been aged, meaning that fresh cheeses don’t have a rind, have a higher moisture content, and are unlikely to have the infamous potent smell that many aged cheeses do.
One of (if not the) most popular cheeses worldwide is the world-famous Mozzarella. Mozzarella is often differentiated into two main categories, born from buffalo and ordinary cow-milks. Cow’s milk Mozzarella is slightly springier, tighter, and mild, while Buffalo Mozzarella has a gamier and slightly tangy flavour and is generally more delicate and soft.
Moving on, fresh goat cheese (also known aschèvre, the French word for “goat”) is another perfect example of how fresh cheeses are an excellent method to maintain the flavours of the original milk and further flesh them out. Fresh goat cheese made with high-quality goat milk should be slightly tart and earthy with a crumbly yet moist, almost spreadable consistency. Cheesemakers around the world also love to add additional flavours to their goat cheese, such as cranberries or herbs.
Last but certainly not least, we have the famous Greek Feta Cheese. Born in Greece, Feta is a drier, crumbly cheese that can be made with cow’s, goat’s or sheep’s milk. Eating Feta is a unique experience compared to the other cheeses on this list, as Feta’s crumbly texture combined with its salty (largely thanks to the brine Feta is stored in), tangy and rich in a way that must be experienced first-hand to fully appreciate.
Of course, there are more fresh cheeses than these three (Paneer, for one), but these are often the first ones that come to mind when one is asked about fresh cheese in general.
